Ella cooked Chicken Rice

Yeah.. My first attempt cooking chicken rice, some challenges i had:
1) To cook without any premix, not that i have any chicken rice sauce in my pantry
2) I'm going to cook in microwave. Yup, no rice cooker or steamer..
3) No whole chicken but chicken thigh.. a whole chicken is 4lbs = 2+kg, It's simply too big a chicken for us..

My plan sounds pretty awesome right? Chicken rice in 30min using microwave..

To begin with, i had some tips from my mum and housemate, Eve.. I had marinated the chicken hours before the cooking and used chicken stock for the rice instead of plain water.

Tada.. Chicken and rice in the microwave rice container. smells goody, not oily and healthy. *pss* i had removed a lot of fat and skin from the chicken parts. Added a lot of garlic and ginger to make it fragant.

To make my dinner more healthy, i cooked brocooli and cauliflower to go with the chicken rice. Ermm.. where's the cucumber? Yikes, forgot to buy it. Anyway, it was a last min decision to experiment cooking chicken rice.

Here's the yummy and sumptous dinner. No chilli sauce but i'm good on that. It's comforting to dig into this plate of rice knowing that it's a healthier version than the ones back home. k.. ella is trying hard to be a health freak. I know the skin on the chicken is nice, but i choose not to have that. And i certainly know that the fat on the chicken makes the rice fragant. But i removed them when i got home from the supermarket.

Home cook meals are way healthier as you decide what goes into the food. Thinking back, meals i have had in Singapore.. Lunches, dinners... I say for sure, my mum's cookings the healthiest among the lot.

Yeah.. Yummy chicken rice for tmr lunch too.. =)

    The best way to make your chicken rice fragrent is to fry the uncooked rice in garlic and ginger first. You'll probably need to boil a whole chicken to get a tasty enough stock as well.

    Whole Chicken = 4lbs = 8 meals for 2 person? Nay.. i stick to my simple version here =P
