How we spent Xmas eve 2010?

We wanted to celebrate Emily's full month on the 24th, which is Christmas Eve. On this day, she turns 1 month, but since it's christmas eve. Everyone has some plans or sorts. So it's just down to us alone.

It has been a rough day since Emily has been up fussing most of the afternoon. I had to make a mad rush to the supermarkets since i was intending to cook us a sumptous dinner and was missing some key ingredients. I wanted to cook us a yummy meal as it had been a rough month, and i didn't want Christmas to just slip us by. So i baking cornbread, double baked potatos, along with pork chops.

It was good. Cornbread could have been sweeter, pork chop was marinated chinese style and didn't seems too much of a fit for the occasion and the other dishes. But it still taste good.

As for the double baked potatos, those are really yummy. Only issue, they took a while before they are done. And we were starving, so we started eating the cornbread and pork chops while waiting for these. It was our first time baking these and certainly a keeper. Maybe i will bake these for others on some occasions.

Despite all the time required to cook this meal, it was all worth it. Both of us enjoyed the yummy and heartfelt dinner. Merry Christmas Emily and to all!!!
